Turkish bulgur salad (Kisir)

  • Ingredients:

    • 1 cup fine bulgur wheat 🌾
    • 1.5 cups hot water 💧
    • 2 tbsp olive oil 🫒
    • 1 tbsp tomato paste 🍅
    • 1 tbsp red pepper paste 🌶️
    • 1/2 lemon juice 🍋
    • 1/2 cucumber 🥒 (chopped)
    • 1 tomato 🍅 (diced)
    • 2 green onions 🌿 (chopped)
    • Fresh parsley and mint 🌱 (chopped)
    • Salt 🧂, black pepper, and pomegranate molasses (optional)

    Instruction

  1. Prepare the Bulgur:

    • Place the bulgur in a large bowl and pour the hot water over it. Cover the bowl and let the bulgur sit for 10-15 minutes until it absorbs the water and becomes tender. 🌾➡️⏲️
  2. Sauté the Onion and Paste:

    • In a skillet, heat the olive oil and sauté the chopped onion until soft. Add the tomato paste (and pepper paste if using) and cook for a couple of minutes until fragrant. Remove from heat.🫒
  3. Combine Ingredients:

    • Fluff the bulgur with a fork, then add the cooked onion and paste mixture to it. Stir well to evenly coat the bulgur with the tomato mixture. 🍅
  4. Add Fresh Ingredients:

    • Add the chopped parsley, mint, green onions, cucumber, and tomatoes to the bulgur. Mix everything well.
  5. Season and Dress:

    • Add lemon juice, salt, pepper, and optional pomegranate molasses or a sprinkle of sumac. Adjust the seasonings to your taste.🧂🍋🥒🌿
  6. Serve:

    • Serve the kısır chilled or at room temperature. It's perfect as a light meal, appetizer, or side dish.
